As we celebrate the holidays with our family and friends, we often think about dinner and we forget about breakfast, especially on Christmas Day. I want to share with you one of my secret shortcuts to a comforting breakfast that is crowd pleaser with everyone, young and old – Macadamian Nut French Toast. It’s simple, effortless, and healthy but more importantly it keeps you out of the kitchen so you can have more time with your family.

Macadamian Nut French Toast (serves 8)
1 loaf of multigrain baguette, cut into 1-inch slices
2/3 cup fresh squeeze orange juice
1/3 cup milk
1/4 cup organic cane sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1/4 teaspoon morrocan cinnamon
1/2 cup organic butter, melted
1/2 cup chopped macadamia nuts
1/2 cup of sliced strawberries
1/4 cup of blueberries
1/4 cup of sliced bananas
Confectioners’ sugar and maple syrup, optional
Arrange bread slices in a greased 13-in. x 9-in. baking dish. In a bowl, whisk the eggs, orange juice, milk, sugar, vanilla and nutmeg until blended; pour over bread. Cover and refrigerate for 8 hours or overnight.
Pour butter into a 15-in. x 10-in. x 1-in. baking pan. Transfer bread slices to prepared pan; sprinkle with nuts. Bake, uncovered, at 400° for 20-25 minutes or until bread is golden brown. Dust with confectioners’ sugar and serve with syrup. Serve with sides of strawberries, blueberries, and bananas.
